Bonjour,
à travers l’utilisation du chat bot sur notre site web, il y a un formulaire que les gens peuvent compléter…
mais ils reçoivent des informations sur le courriel en anglais alors que notre compte est configuré en français !
comment s’assurer que le chat bot et les communications soient toutes en français ?

Our French Support agents are busy helping other Jotform users right now, so I'll try to help you in English using Google Translate, but you can reply in whichever language you feel comfortable using. Or, if you'd rather have support in French, let us know and we can have them do that. But, it might take a while until they're available again.
Now, coming back to your question, I checked your form's Autoresponder Email and saw that it is in French so form fillers will receive it in French as shown below:
Can you send us a screenshot of the email you're receiving that's showing English? If you're not referring to the Autoresponder Email, can you tell us what email you're receiving that's in English?
After we hear back from you, we’ll have a better idea of what’s going on and how to help.

In fact, I recreated the situation in order to get the print screens...
This is the email that I receive as the owner of the account... english is highlighted in red.
and this is the form I received as the customer :
And the comment we receive is that people think it's spam as the last line
invite them to create a form !
(just remember that we are a church... )

I cloned your AI agent and can see that the other labels are in English even if you set it up as French. Check out the image below:
It seems that the translation can only be observed on the AI agent itself but not on the other areas. While the feature you’re looking for isn’t currently available at Jotform right now, we've gone ahead and escalated your request to our Developers. Exactly when or if it's developed depends on their workload, how viable it is, and how many other users also request it. If there are any updates, we’ll circle back to this thread and let you know.
