If you mean the date shown in the booking calendar, the available information says you can control date availability in Date Picker by opening its properties and using the Limits tab. There you can set options such as Past & Future, Days of the week, Start & End Date, Disable Custom Dates, and Disable Date Ranges.
If you mean the submission date in PDF Editor, open your form in PDF Editor, select the submission date in the main pane, and click the trash icon to remove it.
If neither of these is what you mean, please tell me whether you are trying to hide the date in the form field, the calendar popup, or the PDF.
