Does this work when using tables of data will each row be considered one contact?

If you mean the submissions table then yes, each added entry or row via the form is considered as an individual contact when integrated with HubSpot.

So I just tried connecting Jotform and HubSpot and the problem starts when I'm trying to match fields because the whole table is coming out as one option it did not break down the columns to each represent a field. My table is the one that has the instruction to include the details of leads being referred. See below

Hello mazvi,
This issue happens because of the nature of the Input Table Element. It counts every input in that table as a single form field as shown below:
However, you may be able to use Input Table by making it a one-row element, then duplicating it to create multiple Input Tables as shown below:

Hie guys,
Remember, up there you said that if I were to create multiple tables of 1 row each then HubSpot will be able to recognize each column as a n input field. That didn't work. So each table is being recognized as a single response such that when integrating Jotform and HubSpot there is no option to match the fields in HubSpot with the ones in Jotform because the whole table is a single response. To try and make this understandable; I would like to match the column "Name" with the field "Name" in Hubspot and the column "phone number" with the field " phone number" in Hubspot but the table columns are not being recognized as separate input fields. How can I get this to happen? -

As a workaround, you might consider using separate fields for name and phone number instead. You might also consider getting the value from the input table to a text field and then map these text fields to the HubSpot's field.

How do I go about this? How do I separate the fields of the table unless you mean just creating normal text fields for name and phone number, but I want to be able to collect multiple rows of data at once. I'm not sure I know what you mean when you say map values from table to text field.
I think a step by step guide to do the above will be of great help.

You actually got it right!
You would need to separate the fields into regular text fields.
Regarding the requirement of the multiple rows of data, would it be a finite amount or it could be completely random?

For one of my forms I was allowing an input of 60 rows of data into the table. If I'm to separate the fields into regular text fields this means I get one group of text at a time (after a submission) right? e.g. One name, one phone number and one email address.

But this still won't work to directly map with hubspot and if you downloadthe csv file the responses are not population row by row by all going into one big row. like below. -

There seems to be some confusion. Please note that when you download your submission in Excel file, each submission will be displayed in one row. If you have received 20 submissions in form, the Excel file will show 20 rows.
It seems you want to display one submission record data in multiple rows of Excel file, which is not possible.

So we tried the idea given above (creating the table as separate entries) but when exporting the data it is still all going across in the same row.
