Where do Jotform store data and how it is used?

I would like to understand where data is stored and how it is used. I am using my account to collect Australian customer data, that is used to populate a PDF. I would like to confirm where the data is stored, i.e. in which country. If the data is stored in the US, what are my options to store locally? Thanks
