The staff member where the jotform for the site is no longer employed here.
I am wanting some assistance in how to change the email address the survey will go to.

Thanks for reaching out to Jotform Support. Let me help you with that:
To change the email address where your form submissions are sent, follow these steps:
- Open your form in Form Builder.
- Click on Settings in the top orange bar.
- Select Emails from the left panel.
- Hover over the Notification Email and click the Pencil icon to edit.
- Go to the Recipients tab, remove the old email address, and add the new one.
- Click Save to apply the changes.
This will update where your form sends submission notifications.

I cant do that as the person has left the organization

Hi Kirsty,
If you don't have access to the original owner's account, you won't be able to change the email address directly. However, if you are an Enterprise user, you can ask your administrator to transfer the form ownership to your account.
Alternatively, the original owner can transfer the form and its data to another account by following the transfer process in their account settings.

Since you no longer have access to the account, the standard email change process can't be completed directly through the account settings. You will need to fill out our Account Recovery form to update the email address on your account. And our relevant team will email you once they've had a chance to look into it.
