It seems this creates the potential for a dead end in the process. I have tried using this "Task" feature, but if the person that the task is assigned to is out or leaves the company there is no way to reroute it once it is in progress. It literally creates a dead process flow that gets stuck with one individual without any way to recover it.
If I am missing something please let me know, but based on the current functionality it seems like you should NEVER use the "task' element unless you want to kill your workflow.

Thanks for reaching out to Jotform Support. Once the workflow is in progress and the person assigned to the Task is no longer in your company, what you can do is edit the Assignee in the Task field and restart the workflow. Let me show you how:
1. Open your workflow in Workflow Builder, scroll down, and select the Task field.
2. Click on the Gear icon on the right side of the field to open Task Properties.
3. Under Task Properties, go to the Assignee field and change the email.
5. Then click the 3-dot vertical line at the upper right part of the page and select Restart flow.
