Hi ierigiuse,
Thanks for reaching out to Jotform Support. Currenlty, calculations can only be done via the form and not on the PDF editor/document. Let me show you how:
Add two Date picker widgets to the form.
- On the Build tab on the Form Builder page, click the Add Form Element button on the left.
- Under the Basic tab, look for the Date Picker widget.
- Drag and drop it into the form and add another one.
Set up a condition to Update/Calculate field.
- On the Form Builder page, click the Settings tab on the orange navigation bar at the top.
- Go to the Conditions section on the left task pane and click Add New Condition button.
- Select Update/Calculate Field from the options.
- Set up the formula as required and then click the Save button to apply the changes.

Here is the result:
This field can then be added via the PDF editor as the expiration date.
I created a demo form you can clone for reference.

Thanks for getting back to us. When I cloned and tested your form, everything worked the way it was supposed to. Take a look at the screenshot below to see my results:
I also, tested your actual form by selecting May 1 as the start date, and expiration date is May 1 next year. Take a look at the screenshot below to see my results:
I have cleared form caches to refresh your form. Can you go ahead and try it again and let us know how it goes? If the same thing happens again, we'll investigate it more to see if we can figure out what's going on.
