Thanks for reaching out to Jotform Support. Just to clarify, are you trying to pull the Initial Submission Date and Last Update Date from the Jotform Tables submission data and display it inside a Paragraph element on the form itself?
If so, could you provide more details on what you’re trying to achieve? For example, do you need these dates to be dynamically updated when the form is edited, or are you looking for a way to display them based on a specific condition?

We are using an approval process and would like to track the date/time information here (under status).
The best case scenario would be able to use the workflow approvals; however, the approval status from the does not integrate with Google Sheets, so we need to use this workaround.

Unfortunately, currently there's no method to capture the submission edit date. While the feature you’re looking for isn’t currently available at Jotform right now, we've gone ahead and escalated your request to our Developers. Exactly when or if it's developed depends on their workload, how viable it is, and how many other users also request it. If there are any updates, we’ll circle back to this thread and let you know.
