    How does this work because I have forms being deleted every 7 days and I don't want that data being stored anywhere?

    4. Then, select the Deletion Period (for example, 7 days) and click on Next

Image-2 Once this is enabled, submissions for that form will be automatically removed from your account after the period you set. If you want to be sure nothing is retained earlier than that, you can also manually delete and then purge submissions from Jotform Tables for each form.
